Ingredients

2 oz Soda water
1 Pinch mint
0.5 oz Demerara syrup
0.75 oz Lime juice
1 oz Savory & james manzanilla sherry
1.5 oz Plantation pineapple rum

Instructions

Lightly muddle the mint in a tall glass, add the rest of the ingredients with the soda water last, and fill with crushed ice. Garnish with pineapple fruit leaves and a sprig of mint, and add a straw.
