Ingredients

  • 2 oz Soda water · Mixer
  • 1 Pinch mint
  • 0.5 oz Demerara syrup · Syrup
  • 0.75 oz Lime juice · Juice
  • 1 oz Savory & james manzanilla sherry
  • 1.5 oz Plantation pineapple rum · Rum

Instructions

Lightly muddle the mint in a tall glass, add the rest of the ingredients with the soda water last, and fill with crushed ice. Garnish with pineapple fruit leaves and a sprig of mint, and add a straw.
